Whole Grain Barley "Agrotiko" with Chicken Fillet & Cranberries

“In this dish, tradition meets modern nutritional value. We created a barley root based on balance and pure ingredients.”

Whole grain barley is slow-cooked in a handmade sauce of fresh tomato and white wine, acquiring a velvety texture. We add a carefully selected variety of vegetables —crisp celery, carrot, zucchini and peppers— that give body and freshness to the dish.

The tender chicken breast fillet ideally complements the whole, while our secret lies in the contrast of flavors: the addition of cranberries offers an unexpected sweet-sour intensity, while the soybean paste and extra virgin olive oil give a deep, umami aftertaste. Fresh basil and parsley complete the aroma of this nutritious and high gastronomy meal.

  • Highlight: High fiber content thanks to whole barley.
  • Chef’s Note: The presence of celery and cranberries creates a unique flavor identity that goes beyond the ordinary.
